In 2020, Claudia Samboni took ownership of Finca Las Nubes with a clear vision: to create a lasting legacy in the world of coffee. Nestled near the small township of Aguas Negras, just outside Pitalito, this remarkable farm sits in one of Colombia’s most celebrated coffee-growing regions, blessed with both ideal conditions for cultivation and breathtaking views.

From day one, Claudia has championed quality and innovation, and this Pink Bourbon lot stands as a testament to her dedication.

The process is meticulous: cherries are hand-harvested, floated to remove imperfections, and sealed in tanks for a 60-hour whole-cherry fermentation. After pulping, the coffee undergoes a further 140-hour dry fermentation, enhancing its complexity and sweetness. Once complete, the coffee is thoroughly washed to remove excess mucilage and slow-dried on raised African beds for 20–25 days, depending on weather conditions.

Colombia’s coffee story runs deep. It’s believed that coffee first arrived here with priests in the 17th century, perhaps just decades after its introduction to the Americas. Among them, one priest, Father Francisco Romero, is said to have sparked Colombia’s commercial coffee cultivation. As legend goes, he prescribed the planting of coffee trees as penance for his parishioners’ sins. Inspired by the idea, the Archbishop of Colombia encouraged others to follow suit, and soon, coffee spread across the nation, taking root in regions like Huila, where farms such as Finca Las Nubes continue to redefine excellence today.
