This double fermented, thermal shock castillo from Diego Bermudez is a brilliant showcase of experimental processing highlighting notes of Candied Strawberry, Peach Melba, and Vanilla.
Diego Samuel, 39, born in Bolívar, Cauca - a grower turned mad scientist of flavour. For over 13 years, he’s dedicated his life to the pursuit of precision coffee craft - dissecting, decoding, and re-engineering what high-end specialty coffee can taste like. His approach? Equal parts science, obsession, and art. The results? Outrageously unique cups that push sensory boundaries.

PROCESS: Double Fermented, Thermal Shock
This lot begins with precision harvesting — cherries picked at peak ripeness. After ozone cleaning, they undergo a 72-hour anaerobic fermentation in water.
The coffee is then pulped and demucilaged, while leftover pulp and mucilage are used to cultivate microorganisms that create a flavour-rich culture medium. This culture is reintroduced for another 36-hour fermentation, letting beans absorb complex aromas. Finally, a thermal shock locks in flavour before low-temp dehumidifier drying preserves freshness and Diego’s signature delicate notes.

For the 19th edition of Freak & Unique we commissioned artist Fleur Yearsley to create this work titled 'Take your Seat'.
The Friends couch? Worn in all the right places. Morpheus' red armchair? A velvet gateway to alternative realities. These chairs aren't just props, they're portals. A reminder that pop culture lives in the furniture of our imagination. The artwork reimagines these empty seats as an open invitation: to pause, sip, and let the coffee carry you somehwere.
The subject matter of my paintings is the fruit of personal memories, often imbued with a sense of shared pop culture imagery. The symbols and objects of my work become a focal point for broad collective experiences instilled with mortality. They are captured moments of our past life - memories of what makes us who we are.
