El Zacatin is a 17-hectare, family-owned farm in the highlands of southwest Antioquia, Colombia, overlooking the Cauca River valley. It is run by third-generation producer Eduardo Fernandez-Restrepo, an early adopter of specialty coffee in Concordia.
Eduardo’s family owns three farms in the area and focuses on distinctive varieties including Gesha, Tabi, Pink Bourbon, and SL-28, all carefully sourced through research institutions, fellow producers, and international partners. What began on two hectares has grown into several tons of annual production.
Processing at El Zacatin emphasizes efficiency, consistency, and quality. This Natural Tabi was hand-picked and sorted, fermented for 48 hours aerobically and 24 hours anaerobically, then dried on raised beds to 11% moisture, with limited mechanical drying during the rainy season for stability.
