Nestled in the renowned coffee-growing region of Nueva Segovia, Finca Bethania has been producing exceptional coffees since 1991. The 42-hectare farm is planted with a diverse mix of varieties including Caturra, Catuai, Catimor, Maracaturra and Java—each contributing to the complexity in the cup.

The farm is run by Ana and Martha Albir, third-generation coffee producers whose family has been cultivating land in the area since the 1930s. With a strong focus on sustainability, Finca Bethania is Rainforest Alliance certified. It recycles all water used in processing and actively conserves surrounding forest and wildlife habitats.

Processing takes place at Cafetos de Segovia, a dry mill established by the Albir family in 2015. Built out of a need for fairer prices and greater control over quality, the mill has become a hub for local producers. During harvest, it handles coffee from over 47 farms in the region, processing up to 300 quintales (≈13,800 kg) of coffee per day.

The mill is equipped with a drying patio and greenhouse for experimental and delicate varieties. Coffees are typically washed, beginning with shaded drying before moving to full sun exposure—an important step in this lower-altitude region to manage fermentation and flavour development.

Despite a turbulent past—including land seizures during the Nicaraguan Revolution—the Albir family has rebuilt and grown their legacy, combining tradition with innovation. Cafetos de Segovia regularly places in Nicaragua’s Cup of Excellence, a testament to their commitment to quality from farm to mill.
