This lot comes from Great Rift Coffee in Nandi County, Kenya. Cherries are hand-sorted, floated, pulped, and washed to remove mucilage. Drying begins with 4–6 hours on skin tables to remove surface moisture and prevent over-fermentation.
The coffee is then moved to raised beds, where it dries for 10–14 days in thin layers, turned regularly and protected from harsh sun or rain, until it reaches a stable moisture level. Once dried, the parchment is milled, hulled, and graded by size and density.
A final hand-sorting stage removes any remaining defects, ensuring only the highest-quality beans make it through—maintaining full control from farm to cup.
