This lot comes from El Borbollon, a renowned coffee mill just outside Santa Ana, El Salvador, with over a century of experience in growing and exporting coffee. Nestled in the Apaneca-Ilamatepec Mountain Range, the region is known for producing consistently clean and sweet coffees, thanks to its excellent growing conditions and sustainable farming practices.

A carefully curated blend of Bourbon and Pacas varieties, this lot was selected by El Borbollon’s head cupper, Luis, who ensures only the finest shade-grown beans make the cut. After harvesting, the cherries are delivered to the mill, where they undergo a meticulous washed process. The cherries are pulped upon arrival, then moved through channels into fermentation tanks, where they rest for 13 to 15 hours. During this time, naturally occurring bacteria and microbes break down the sugars and mucilage, enhancing clarity and sweetness.

Once fermentation is complete, the beans are washed and transferred to the drying patios, where they dry for 8 to 10 days under careful supervision. This process results in a beautifully balanced coffee with a clean cup profile, refined acidity, and a delicate sweetness—an excellent showcase of El Borbollon’s expertise in specialty coffee.
